Taboulè
Couscous, soaked in water, lemon juice, olive oil and a dash of soy sauce.
Some mint, lots of parsley, chopped. Shallots and some garlic, finely diced (optional: smartass, also finely diced. I recommend using @dullahan for this).
A cucumber, diced. The secret to making a cucumber taste good is cutting it horizontally, removing the seeds, pouring salt over it, and letting it sit for a while until the salt has been absorbed.
Tomatoes, diced, with their seeds also removed as to not add too...
Chinese-inspired stir fry
Improvised this thing, not sure what chinese food actually tastes like.
Onions (optional, @neonprotocol) sauteed. Lots of white pepper and fennel seeds, with some aniseed, cinnamon, sichuan pepper cloves, and salt, ground into a fine powder.
Fennel and green bell pepper, cut into small stripes. Sweat for a little while, then add broth, soy sauce, rice vinegar and toasted sesame oil. If you cook vegetarian/vegan, also add some yeast extract to replace meat broth's umami...
Vegan Hamburgers
Out of desperation, not knowing what to cook, I just improvised some hamburgers. Only figured out each next ingredient after adding the last, it was a bit chaotic.
Despite, they were surprisingly tasty.
Toasted buns, fried tofu, seared bell pepper and zucchini.
Most importantly: Sauce I made by caramelizing shallots with some sugar and chili, deglazing with white wine, added carrots, apples, vegetable broth. Later stirred in mustard and olive oil. Took a while until the...
Wasabi Sauce
My mom was visiting me, so I decided to cook something fancy.
Finely diced shallots, sweated in butter. Added some black pepper, white wine and vegetable stock, let it simmer until reduced to half.
Added cream, cooked for a little bit, then added wasabi paste and honey. Put in dill at the very end & salted to taste. Made the mistake of overestimating the wasabi paste. The sauce is gonna be way less strong than it seems to be when tasting.
Had it with salmon filets,...
Flatbreat (Roti)
Just had hummus and bread for dinner. Was too good for how simple it was.
Water, salt. Slowly added flour until the dough wasn't so sticky anymore.
Kneaded for eight-ish minutes.
Spread into small circles and baked in a hot pan. Best made with ghee (clarified butter), but canola oil worked just fine also.
If you love your stomach and hate your arteries, spread some butter on the still-hot bread.
Feels like forbidded knowledge. It tastes the best, and with most...
Pastasotto
Just came home from a lecture and improvised something risotto-like from the stuff I had lying around.
Tossed some Onions and the champignons I forgot to put into my stir-fry yesterday in butter.
Deglazed with white wine, added vegetable broth and cheese. Salted and peppered. Muscat and fresh thyme or parsley would've also been nice if I had them.
Added greek noodles (the little rice-shaped ones) and let it boil on the remaining heat until done.
Eating it right now, and the extreme...
No-onions stir fry
A 15-minute comfort food.
Fried some Tofu on high heat, added half a fennel, a green bell pepper and two carrots cut into thin slices.
Threw in fennel seeds, white pepper, aniseed and selfmade mustard, but just some black mustard seeds will do as well (although I'd add them earlier then).
Deglazed with soy sauce, poured in some rice vinegar and honey. Tossed it with rice noodles, then made space in the middle for eggs. E voilá.
Pro tip: You will probably have to flip the...
Shakshouka
Sautéd onions in olive oil, added a bell pepper and tomatoes.
Spiced with cumin, pepper and dried chilies, cooked until the tomatoes turn pulpy.
At that point, I made some holes with a spoon to poach eggs in. The dish is ready when the eggs have the desired consistency.
Served with hummus and some simple flatbreat I made in a second pan, it was a simple yet satisfying meal. Can recommend, I eat it at least every other week.
Onions soup
Decided to cook something fancy and french.
Sautéd some onions in butter, added flour. Poured white wine and broth over it, cooked for a little bit & spiced with pepper, salt and muscat.
Toasted some slices of baguette with butter, laid them on top of the soup, added cheese, and into the oven it went.
It was absolutely delicious. The Soup tastes pretty nice, but as you'd expect, not too interesting on it's own. What makes it grand is the bread, and, if you use a good one, the cheese....
