Chinese-inspired stir fry

Improvised this thing, not sure what chinese food actually tastes like.

Onions (optional, @neonprotocol) sauteed. Lots of white pepper and fennel seeds, with some aniseed, cinnamon, sichuan pepper cloves, and salt, ground into a fine powder.

Fennel and green bell pepper, cut into small stripes. Sweat for a little while, then add broth, soy sauce, rice vinegar and toasted sesame oil. If you cook vegetarian/vegan, also add some yeast extract to replace meat broth's umami flavor.

Taste, and, if needed, adjust the flavor with soy sauce, vinegar, and some kind of deep-tasting sweetener. Maple syrup works for this, so does a dark honey.

Add noodles (I prefer very thin wheat noodles for this, they take up more sauce than rice noodles) and some fried tofu.

Serve with some sesame sprinkled over and an egg, either soft-boiled or fried.
