Couscous, soaked in water, lemon juice, olive oil and a dash of soy sauce.
Some mint, lots of parsley, chopped. Shallots and some garlic, finely diced (optional: smartass, also finely diced. I recommend using @dullahan for this).
A cucumber, diced. The secret to making a cucumber taste good is cutting it horizontally, removing the seeds, pouring salt over it, and letting it sit for a while until the salt has been absorbed.
Tomatoes, diced, with their seeds also removed as to not add too much unwanted moisture into the salad.
Toss all the ingredients and add some black pepper, then taste with salt, lemon juice, and minced raisins. Don't overdo it, the salad gets way more aromatic if left to sit for an hour or two.
Makes for an easy lunch for three days if kept cold. When having it for dinner, I like to combine it with shakshouka, flatbread, and hummus.
