[ESC]Onions soup
Decided to cook something fancy and french.
Sautéd some onions in butter, added flour. Poured white wine and broth over it, cooked for a little bit & spiced with pepper, salt and muscat.
Toasted some slices of baguette with butter, laid them on top of the soup, added cheese, and into the oven it went.
It was absolutely delicious. The Soup tastes pretty nice, but as you'd expect, not too interesting on it's own. What makes it grand is the bread, and, if you use a good one, the cheese. The consistency and mouth-feel are incredible. The slices somehow soak up soup and become pretty tasty from all the butter, but at the same time get real crunchy from the baking, even more than from toasting.
With all the water evaporating in the oven, it becomes almost a pudding in the end, which I wasn't expecting.
Served it with a simple rucola-tomato salad and creme brulee. Can thoroughly recommend.
